Personal Story

My personal journey into the world of nutritional therapy began when my son was diagnosed with Ulcerative Colitis at the age of 17.

The Gastroenterologist told us that his condition was incurable and that he would have to undergo surgery to remove the diseased part of his bowel and have a stoma bag fitted, with a lifetime of steroid medication. My son, however, rejected this treatment and we set out to find a way to heal him naturally.

We tried many different treatments, including colonic irrigation, Chinese medicine, and acupuncture, but it wasn’t until we discovered that food could be used to heal the body that we saw real progress. I found a Nutritional Therapist who guided us on the road to recovery, and with her help, we began to see improvements in my son’s health.

ADVICE

  • Drink only fresh homemade raw vegetable juice until diarrhoea stopped.

  • Take supplements to support gut healing.

REMOVE

  • Veg seed oils and margarine
  • All dairy products
  • Processed food & ready meals
  • Grains products
  • Sugar and fruit
  • Milk and other dairy products
  • Animal protein

ADD BACK SLOWLY

  • Healthy fats, avocados, nuts oils, olive oil, coconut oil
  • Green smoothie
  • Plant milks & nut creams
  • Organic vegetable (steamed initially)
  • Fermented foods
  • Sprouted and fermented grains
  • Berries

Within days the diarrhoea stopped, within 3 weeks he was back at work

He regained two stone in weight, and we continued with raw green smoothies and plenty of vegetables. My son added back animal protein but avoided bread, sugar, processed food, and beer.

Recovery

Our family adapted to a nutrient-rich whole food diet that excluded processed foods, grains, and sugar, and we soon saw positive results.

My own psoriasis, rosacea, and chronic constipation disappeared, and I lost two stone in weight. However, I soon discovered that I had taken the vegan diet too far, and it had caused problems with my stomach acid, bloating, and weight gain.

The Truth about Guidelines and My Journey to Health

When Tom became ill, I was 46 years old overweight suffering with psoriasis, rosacea, chronic constipation and was postmenopausal! I had experienced a series of family tragedies, stated comfort eating and gained weight steadily for about 4-5 years. I decided to go on a diet and foolishly followed government guidelines……

I was always hungry and constantly craving carbs and I got fatter!

Government Guidelines

  • Low fat food
  • 6 portions whole grain bread, rice or pasta, high fibre breakfast cereal (Fruit & Fibre & All-bran)
  • Skimmed milk and no fat yogurt
  • 5 fruit and veg a day, including fruit juices
  • “Healthy” veg oils and margarine
  • Calorie counting and exercise

But by eating the same food as Tom my psoriasis, rosacea and hormonal issues vanished never to return and I lost 2 stone in weight! I planned to remain a raw vegan, as at the time I thought this was evidently the best way to eat. I was hooked

However I continued to lose weight & noticed muscle loss and developed kidney and gallstones. I was having problems with my teeth, was also at risk of osteoporosis and a scan confirmed this.

DIET

From Raw Veganism to Balanced Health

But after switching to a vegan diet, I discovered that I had merely traded one set of problems for another. The vegan lifestyle was initially beneficial, but I had taken it too far, leading to the destruction of my stomach acid and resulting in low protein levels, poor mineral absorption, and bloating caused by SIBO.

Issues

To make matters worse, I had developed kidney stones from consuming too much spinach, my gallbladder was sluggish due to a low-fat diet, and I even had a parasite.

And to top it all off, the stress of working full-time while studying in the evenings and weekends for three years led to poor blood sugar control and disrupted circadian rhythms, causing mid-body weight gain.

I decided to add animal products and carbohydrates back into my diet & while I did gain muscle tone, constipation returned with bloating and mid-body weight gain! Now I was confused and decided that I wanted to know what was going on and what was the ideal diet!

It was then that I realised the importance of understanding the optimal diet and digestive system, so I decided to look into further study.

Study

I enrolled in the London College of Natural Medicine to study natural medicine and gain my diploma in Nutritional Therapy. Through my studies, I learned that food is more than just calories – it’s information that your body needs to function properly. I also gained a deep appreciation for the role that the digestive system plays in understanding the optimal diet.

After years of studying and gaining experience, I am now a certified nutritional therapist with the knowledge and tools to help others regain their health. It brings me joy to guide others on their journey towards better health and wellness.
